Food vendors prepare for health inspections at the Tulsa State Fair.

Before everyone can get their hands on funnel cakes, corn dogs and everything fried at the Tulsa State Fair this week, food vendors must pass health inspections. There are over 200 restaurants at the Tulsa State Fair this year.

After traveling from all over the country, vendors are cleaning up before inspections begin on Tuesday.

From Osage Skynews 6, the only thing missing before the Tulsa State Fair is that people, it seems, are looking for excitement from a ride or something fried. On the ground, however, it is clear that much work remains to be done.

Come in, come in here! We’ve got our lemon squeezer right here for freshly squeezed lemon juice. Right here we have our cheese machine for hot zesty nachos. Right here we have our corn dog cooker. And everything else,” said Billy Fickling with McKinney Food Services.

Fickling’s mustard is the most popular condiment for corn dogs at the Tulsa State Fair each year. “Everybody in Oklahoma loves mustard,” he said.

Amy: “What about other places you go?”

Billy: “Well, up north, like in Wisconsin, it’s ketchup. And down south, it’s mustard. In Louisiana, past Houston, it’s got to be mayonnaise.”

But regardless of the seasoning, things should be clean. Fickling traveled 800 miles from Illinois to be here.

“Going up and down the road, it gets dust and everything. And as I say, we try to make it as clean as possible,” he said.

“We just finished the Kansas State Fair. So we didn’t have too far to travel this time,” Matt Hall with “Chicken City.”

At Chicken City, a new fair dish will debut this year: the “OMG Chicken Sandwich.”

“Ice flake coated chicken, on a glazed donut, and topped with bacon and maple syrup,” Hall said.

But before serving that sweet and savory sandwich, Hall works to make the trailer flawless.

“The health inspection starts tomorrow. And on Wednesday, making sure that everything is good to be open on Thursday. So we have to be as clean as outside,” he said.

The Tulsa Health Department said the tests will only continue over the next few days. Over the course of “11 Days of Wonder,” supervisors put in about 500 hours.
